While I don't usually seek out pairings when I start a new show, I am guilty of almost always focusing on one. I can still enjoy the show for what it is, but having a ship does make it that much more interesting and fun (fandom-wise) for me.
I guess a lot of my ships I can see romantically/sexually, but it isn't something I focus on? I can see it happening in the right circumstances, but all I really want is them to have more screen time together. Which is probably how most people ship anyway - Enjoy them onscreen together and read fanfiction to explore the other possibilities. I guess I'm just used to hearing the few but very vocal fans who demand that their ship is canon and get pissy when maybe what they get isn't quite to their liking.
